Herb Butter

Butter infused with a variety of herbs and spices is a great item to have on hand during holiday cooking because it can be used in so many dishes to enhance their flavor. Currently South Carolina has one known spice supplier in the state. See the information at the bottom of this article for more.


1/2 cup butter or margarine
4 teaspoons lemon juice
2 teaspoons chives chopped
2 teaspoons thyme chopped fresh or tarragon leaves
1 teaspoon garlic salt


In a 1-cup microwavable measuring cup, place butter, lemon juice, chives, thyme, and garlic salt. Microwave, uncovered, at 100% power 1 minute or until butter melts and is bubbly. Stir to blend. Let stand 3 minutes to improve flavor. Herb butter is great for basting a turkey. If you'd like to baste your chicken or turkey with this, add in a ½ teaspoon of sage and a ½ teaspoon of rosemary as both work so well with poultry.
