Chocolate Chip Pecan Cookies

A chocolate-chip cookie.Image via Wikipedia
They say the south is full of nuts and to some extent that may be true, one nut in particular we are partial to in South Carolina is pecans!
. This recipe is a yummy version of the classic chocolate chip cookie recipe. It has a little extra flare. Enjoy!

Difficulty: Moderately Easy

Things You'll Need:

* 3/4 cup Shortening
* 1 1/4 firmly packed brown sugar
* 1 tbsp. vanilla
* 3/4 tsp baking soda
* 1 tsp. salt
* 1 egg
* 2 tbs milk
* 1 cup of semi sweet chocolate cookies
* 1/2 tsp ginger
* 1 cup chopped pecans
* 1 3/4 cup of all purpose flour
* 1 tsp. almond extract

Step 1
Heat oven to 375 degrees. In a large bowl combine Shortening, brown sugar vanilla extract, almond extract, and milk and mix with an electric mixer at medium speed until mixture is well mixed.

Step 2
In a seperate smaller bowl, mix with electric mixer your eggs until well blended. Add this to the shortening/milk mixture. Put the mixer back on medium and make sure all is mixed well.

Step 3
In seperate bowl sift together all dry ingredients and then add to the larger bowl with the other wet ingredients. Stir in Chocolate chips, and pecans. Mix well but do not over mix the ingredients at this point.

Step 4
Drop by rounded teaspoon full onto an ungreased cookie sheet and bake for 8 to 10 minutes. Use a spatula to remove from cookie sheet and place warm cookies on aluminum foil to cool completely. This recipe makes around 3 dozen cookies.
