This may seem like something your family will not love but the great flavors make this a great side dish for everyone.

Ingredients
1 (10 ounce) package frozen chopped spinach, thawed and undrained
1/3 cup crushed saltine crackers
1/3 cup of crushed seasoned bread crumbs
3 tablespoons of Parmesan cheese
2 eggs, beaten
1/2 teaspoon onion powder
salt to taste
1 ½ cups shredded Cheddar cheese, divided
1 cup sliced portobello mushrooms
Directions
- In a bowl, combine the spinach, saltines, eggs, mushrooms, parmesan cheese, crushed seasoned
bread crumbs, onion powder and salt. Stir in half of your cheddar cheese. Transfer to a greased baking dish; sprinkle with remaining cheese. Bake, uncovered, at 350 degrees F for 30 minutes or until cheese is melted and bubbly.
