Now there are several versions of white chicken chili, the super easy and fast one, the somewhat easy and fast one..and well that's it..
Super easy version involves the following:
Ingredients:
2 cans white chicken meat. (Figure on one can per person if you're big eaters. In my family we are.)
2 cans of white kidney beans (if you don't have kidney beans you can use navy beans)
1/2 cup diced onions
1/2 cup diced celery
1./2 cup diced bell pepper
1/2 cup diced/sliced mushrooms
1 small Can of Cream of mushroom soup- (you can use cream of chicken if you like)
1 tsp cumin
1 tsp cayenne pepper
1 tsp white pepper (if you have it, if not use black)
1 tsp paprika
salt to taste
1 tsp sage
1 tbs Olive oil
Instructions:
In sauce pan saute onions, mushrooms, bell pepper, celery and spices in small amount of olive oil. Once veggies are softened add in chicken and heat through. Add in kidney beans and small can of cream of mushroom soup and stir until all is incorporated well.
