Ingredients:
4 garlic large, halved
2 tablespoons of soy sauce
1 teaspoon hot pepper sauce
1 cup low salt chicken broth
1 cup lemon juice fresh
1 teaspoon lemon peels grated
1 cup lemon marmalade
1/4 cup Catalina salad dressing
1 tablespoon brown spicy mustard
3 pounds of cut up chicken
Instructions:
Combine garlic, soy sauce, hot pepper
sauce, broth, orange and lemon juices, grated lemon, lemon marmalade,
Catalina salad dressing and mustard in a food processor and purée.
*You can also use a blender or Ninja for this . Pour this mixture
over chicken cover, refrigerate for anywhere from 6 to 12 hours.
Drain chicken from juices and marinate and place in roasting pan.
Bake in preheated 350° F oven for 30 minutes. Remove from oven and
grill over low-heat coals, basting with marinade and turning
frequently for about 30 minutes or until cooked through.
For a tropical twist try changing out
lemon based ingredients with orange and pineapple.
