Old fashioned Green beans with ham hocks

Its hard to imagine having any other side dish with your Christmas ham than this easy to make and good smelling side dish. Green beans with ham hocks is also a great way to use that leftover ham and ham bone after the holidays too. Try it a long with some Hoppin' John for New Years day! Ingredients:

4-6 cups of fresh green beans
3 ½ cups water
1 pound ham hocks
1/2 cup onions chopped
4 new red potatoes quartered
Salt and pepper

Instructions:

Rinse and snap off ends of green beans and break each bean into bite-size pieces, about 2 inches long. In a medium saucepan over high heat, place beans,water, ham hock and onion. Bring to a boil; reduce heat to low and simmer for 1 hour or until ham begins to get tender.

Add potatoes to saucepan and continue to cook for around 1 hour or until potatoes are fork tender. Remove ham hock and dice meat. Return meat to the bean mixture. Simmer 10 minutes. Add salt and pepper if needed.
