Cranberry Pudding



Have you ever tried Cranberry pudding? Well now you can, this is a super easy recipe and a nice surprise at any holiday gathering. Play around with this recipe and find other ways to make it fun to eat.

Serves 6 or 8 if using a round dish to bake in.

Ingredients:
1 cup all purpose flour
1 teaspoon baking powder
½ cup sugar
½ cup milk
2 tablespoons margarine, melted
2 cups whole raw cranberries (washed)
Sauce:
½ cup of confectioners sugar
½ cinnamon
¼ teaspoon ground nutmeg
1 cup heavy cream *see note for other options


Cranberry pudding recipe:

Preheat oven to 350 degrees F

Mix together flour, baking powder and sugar; add milk, melted butter and cranberries. Pour into greased 8-inch round or square baking dish and bake for 30 minutes or until tester comes out clean.

Sauce:
Mix in a bowl the following ingredients:
Add sugar,cinnamon and nutmeg to 1 cup of heavy cream *(you can use half and half or condensed milk if you like as well) Serve over pudding.
