Chocolate Eggnog pie

If you are like many, you may find yourself with left over eggnog and would love a way to use it in a new recipe. Perhaps you're just looking for a recipe that calls for eggnog? Either way this yummy treat is a great surprise dessert for your Christmas dinner, Christmas eve party or any holiday. One benefit of this recipe is it calls for a ready made pie crust. Makes 8 servings

Ingredients:
1/4 cup sugar
3 tablespoons unsweetened cocoa
2 envelopes unflavored jello
1/4 teaspoon nutmeg ground
2 1/2 cups eggnog store bought or already prepared
1 cup whipped cream
1 pie shell baked and cooled completely
Redi whip (garnish)
cocoa powder for garnish 

Tip: You will need two large mixing bowls, one that nests into another is ideal for this recipe. Make sure you read through this recipe before you begin so you will know what all you need in it's preparation.

In a medium saucepan on low heat, mix sugar, cocoa powder, jello, and nutmeg. Stir in 1 cup of eggnog; let stand 1 minute. Stir until jello dissolves completely.

Add in the rest of the eggnog. Pour into a bowl large enough to accommodate mixture. Place this bowl into a larger bowl that has ice cold water and/or water with crushed ice. Stir until mixture is pudding like consistency on the spoon and forms a mound. Remove bowl from ice water.

Fold in whipped cream. Gently scoop into pastry shell. Chill until firm.

Garnish with cocoa powder, and Redi whip if you like.
