Kielbasa and Zucchini

I am a big fan of one pot wonders. This skillet dish is a great way to feed a family or even a few big eaters. Simple, tasty and one pot clean up if you don't count the dishes and utensils lol.

Ingredients: 

(Adjust according to your own needs)

2 packages of Kielbasa 

4 cups of sliced Zucchini

1 chopped onion

1 cup sliced mushrooms

1 large chopped Bell Pepper

Two cans of diced tomatoes

Seasonings:

*These are all suggestions, you can certainly add to or omit any or all to suit your taste.

Extra Virgin Olive oil

Members Mark Brand Italian seasoning mix

Salt (to taste) Note: Be mindful of the fact that Soy Sauce will add a good deal of salt to this dish

Pepper ( to taste)

Soy Sauce ( to taste)

Garlic powder

Onion powder

Instructions:

 Step 1: 

I like to slice all of my ingredients ahead of time and I find this makes the whole process much simpler. First in the pan is the sausage. In a large skillet, ( mine is 14 inches) add enough olive oil to heat and slightly brown sausage.

Note: I had some saved chicken fat that I used instead of Olive oil. Use what you prefer, as I state for all of my recipes. This is just one way to make this but make it your own and you'll never be disappointed. Usually I used Olive Oil.

Step 2 :

Add in your pre-sliced Zucchini and cook with the sausage until it starts to get soft.



Step : 3


Add in your pre chopped Onions, Bell Peppers and Mushrooms. Turn heat down to medium and cook all ingredients until all become soft.  

Step 4:

Canned Diced Tomatoes


I add in my canned tomatoes at the end, cover and turn my heat down again to low and allow all to simmer together for about 10 mins. Keep an eye on everything and stir as necessary. The final things I add are my seasonings. 

This dish can be served as a stand alone with shredded Parmesan cheese, or over Rice.
