Quick and easy, Chorizo chili


Once the chilly weather sets in, we will all be looking for those comforting warm dishes that make us want to snuggle up on the sofa, look at the flickering of a fireplace and enjoy the evening. This quick and easy Choriso chili recipe is perfect, loaded with flavor, it tastes like it took all day to simmer. It is an easy fix and is semi-homemade. Using store bought ingredients along with some special add ins.


Ingredients:

Olive oil

1 large can of drained baked beans

1 large can of diced tomatoes

1 large can of pureed or crushed tomatoes

1 tsp Basil

1 tsp Oregano

1 chili mix pack

dash of soy sauce

dash of Worcestershire sauce

garlic powder *to taste

10 links of Chorizo sausage

1 bell pepper diced

1/2 to 1 large onion diced

1 and 1/2 cups chopped mushrooms


Prepare chorizo by slicing into 1/4 inch pieces and saute in a large Dutch oven or frying pan with a small amount of Olive oil. As the chorizo browns add in chopped Bell Peppers, chopped onions, and mushrooms and stir. Add about a 1/4 cup of water once Chorizo is browned to the pot and continue to simmer until peppers, onions, and mushrooms have cooked through.

Add one strained can of baked beans to the Chorizo. If you like you can rinse these beans and then add. Your option. Add in diced canned tomatoes, and heat through. Add finally crushed tomatoes and heat through. Add all spices, including chili mix. If you have no chili mix just add 1 tsp. paprika, 1/2 tsp. Cayenne pepper and 1 tsp. of Cumin.

Simmer until all components are heated through and through and serve in a bowl with some shredded sharp cheese on top.

This recipe can serve up to 6 adults, or 4 really hungry ones.
